This dish allowed us to explore a product that perfectly represents the beauty and flavor of Italy: burrata from Andria. Born in 1956 in the region of Puglia, this cheese has a tender heart: a shell of stretched curd enclosing a filling of stracciatella, an irresistible cream of mozzarella shreds.The burrata we serve is PGI – Protected Geographical Indication – a guarantee of its artisanal origin and superior quality. One important detail: it must be enjoyed as fresh as possible. The fresher it is, the better it tastes!

What makes burrata so special compared to mozzarella or other fresh cheeses?


We’re talking about a true gem of dairy tradition. The soft interior made from stracciatella (a delicious blend of cream and shredded mozzarella) gives it a dual personality – it’s like having two cheeses in one. Moreover, the rich and sweet flavor from the cream blending into the cheese is simply divine. A little secret: for the best experience, let the burrata rest at room temperature for about an hour before serving. That way, all its flavors can fully express themselves!


Do you have a memory tied to burrata? A moment, a dish, or a person that reminds you of this cheese?


So many memories come to mind when I think of a dish as seemingly simple as tomatoes and burrata. I can picture the moment: hot summer days, me as a child, savoring creamy burrata with fresh tomatoes.


In your opinion, what’s the most surprising – or the simplest – pairing to truly enjoy it?


The greatest strength of burrata is its simplicity. Add just a drizzle of extra virgin olive oil, a pinch of salt, and a few basil leaves, and you’ve got a guaranteed wow effect. A tip to remember? Create a base of colorful cherry tomatoes (yellow, red, and date tomatoes), a drizzle of olive oil, a few basil leaves, a pinch of salt, and a light zesting of lemon. The result? A perfect contrast of flavors that elevates the queen herself: burrata.
